(Blooming) -

The Bean's Journey:
Culture Meets Politics: The roots of the Bourbon varietal trace back to Bourbon Island (now Réunion Island in the Indian Ocean), standing as one of the fundamental heirlooms that established global coffee culture. Introduced to El Salvador in the mid-19th century, the country preserved these historic beans thanks to its fertile volcanic terrain and traditional farming practices. While many global regions transitioned to higher-yielding modern hybrids, El Salvador steadfastly maintained its original Bourbon trees. By introducing modern anaerobic fermentation to this classic heirloom, local producers merged historic legacy with contemporary innovation, proving that honoring one's roots while embracing new techniques creates a truly exceptional specialty coffee experience.
