Unique Bean Profile: Cerrado’s Red Catuai beans shine by delivering a deep and straightforward tasting experience. The foundational notes revolve around rich Dark Chocolate and Nuts, crowned by a distinct, double-layered sweetness of Caramel and Brown Sugar. What makes this crop truly exceptional is its Very Low Acidity and Creamy Body, culminating in a wonderfully Smooth End that leaves a long, pleasant aftertaste.

Processing Method (Natural): These beans were processed using the classic Natural method. Thanks to the guaranteed dry season in the Cerrado region during harvest, the coffee cherries are left to dry slowly and consistently under the sun. This ideal environment allows the beans to absorb the intense sugars from the cherry’s skin and mucilage, significantly amplifying the brown sugar and caramel notes while giving the coffee its signature heavy, creamy body.

Why do we roast in small batches? To highlight the deep sweetness and prevent any roasted bitterness from overpowering the creamy body, we rely on fluid bed air-roasting technology in small batches at our kaefi;n roastery in Alexandria. This clean, consistent thermal airflow ensures the natural sugars caramelize perfectly to accurately hit the brown sugar note. It develops the nutty and chocolate oils without leaving any harsh bitterness, maintaining the cup's smoothness from the very first sip to the last.

Brewing Tip:

For Pour-Over (V60) - Hot: This cup is the definition of warmth, perfect for those who prefer zero acidity in their filter coffee.

  • Grind: Medium to medium-coarse.
  • Water temp: 89–91°C (Slightly cooler to avoid over-extracting bitter chocolate notes).
  • Ratio: 1:15 (16g coffee per 240ml water).
  • Brew time: 2:15 to 2:30 minutes.

For Pour-Over (V60) - Iced (Flash Brew): A heavy-bodied cold brew that tastes reminiscent of caramel chocolate milk.

  • Grind: Slightly finer than hot V60.
  • Coffee: 16g.
  • Hot Water: 140ml (at 90°C).
  • Ice: 100g (in the server).
