من منطقة هوايلا في كولومبيا، واحدة من أشهر وأعرق مناطق إنتاج البن المختص في العالم. هوايلا ليست مجرد منطقة؛ إنها سيمفونية من الارتفاعات التي تصل إلى ٢٠٠٠ متر فوق سطح البحر، التربة البركانية، وأصناف أرابيكا النقية مثل كاتورا وبوربون. هنا، حيث يعمل المزارعون بطرق حرفية لأجيال، تنتج حبوب تحمل تعقيداً نادراً وتوازناً أسطورياً.
تجمع تربة هوايلا البركانية بين خصوبتها العالية وقدرتها على الاحتفاظ بالرطوبة وتصريفها في الوقت نفسه؛ كما أنّ الهطول السنوي المنضبط يساعد في تحقيق نضج متوازن للكرزات وتطوير سكريات معقدة.
تفرد الحبة:
يجمع هذا المنتج بين صنفين عريقين في آن واحد:
كاتورا طفرة طبيعية من بوربون حموضة مشرقة، نكهات حلوة: كراميل، فواكه حمراء بوربون الأب الروحي للأرابيكا نكهات معقدة: شوكولاتة، جوز، توابل
معاً في كل حبة، تنتج قهوة تمتزج فيها نكهات الفواكه الحمراء (الكرز، التوت)، الحمضيات (البرتقال، الليمون)، الشوكولاتة الداكنة، واللوز المحمص، مع لمسة زهرية خفيفة. حموضتها مشرقة لكنها ليست حادة، جسمها متوسط إلى كثيف، ونهايتها طويلة حلوة تشبه العسل.
طريقة المعالجة:
هذه القهوة مغسولة بالكامل (Fully Washed)، وهي الطريقة الأكثر انتشاراً في مزارع هوايلا. بعد قطف يدوي دقيق يزيل الكرزات غير الناضجة، تنزع القشرة وتخمر الحبوب في خزانات مائية لمدة ٣٠-٣٦ ساعة لتفكيك الطبقة اللزجة، ثم تغسل جيداً وتنشر على أفنية خرسانية أو أسرّة مرتفعة لتجف تحت الشمس. بهذا تُبرز المعالجة النقاء الأصيل للحبة، بدون أي نكهات تخمير إضافية.
التحميص الأسبوعي بكميات صغيرة:
لأن تعقيد حبوب هوايلا يحتاج إلى احترام، نحمصها عند الطلب بكميات لا تتجاوز ١٠ كيلوغرامات لكل دفعة، باستخدام تقنية التحميص الهوائي بدرجة خفيفة إلى متوسطة، التي تبرز الطبقات الدقيقة بين الكاتورا والبوربون. ثم تعبئ في اكياس المونيوم بصمام تفريغ الهواء لتصل إليك حبوب القهوة طازجة وفي ذروة عطرها
تكفي لتحضير ١٧ إلى ٢٥ كوباً (حسب طريقة التخمير).

لمحة تاريخية عن قهوة هوايلا:
بدأت زراعة البن في كولومبيا مع قدوم الكهنة المحليين في النصف الأول من القرن السابع عشر. بحلول السبعينيات من القرن العشرين، انتشرت مزارع الأسر الصغيرة في هوايلا بشكل مكثف بفضل اعتمادها على العمل العائلي، بينما بقيت زراعة البن تحت الظل وبطرق تقليدية منخفضة التكاليف. اليوم، تُعتبر هوايلا معقل إنتاج الميكرولوت الفاخر، حيث يمتلك ٨٠٪ من المزارع أقل من ٣ هكتارات.

Huila's volcanic soil combines high fertility with the ability to retain moisture and drain it at the same time; the regulated annual rainfall helps achieve balanced ripening of the cherries and the development of complex sugars.

Together in one blend, they produce a coffee where notes of red fruits (cherry, berries), citrus (orange, lemon), dark chocolate, and roasted almonds merge, with a light floral touch. Its acidity is bright but not sharp, body is medium to full, and finish is long and sweet, reminiscent of honey.
Processing Method:
This coffee is Fully Washed, the most widespread method in Huila's farms. After precise hand-picking removes unripe cherries, the skin is removed and the beans are fermented in water tanks for 30-36 hours to break down the mucilage, then thoroughly washed and spread on concrete patios or raised beds to dry under the sun. This method highlights the authentic purity of the bean, without any additional fermentation flavors.
Weekly Small-Batch Roasting:
Because the complexity of Huila beans deserves respect, we roast them to order in batches not exceeding 10 kilograms per batch, using air roasting technology to a Light to Medium roast degree that brings out the delicate layers between Caturra and Bourbon. We do not blend with other beans, nor do we roast large storage quantities. Order today, we roast tomorrow, and it arrives fresh as if you were on a Colombian farm yourself.

Historical Background of Huila Coffee:
Coffee cultivation in Colombia began with the arrival of local priests in the first half of the 17th century. By the 1970s, small family farms in Huila had spread intensively thanks to their reliance on family labor, while coffee continued to be grown under shade and using traditional low-cost methods. Today, Huila is considered a bastion of luxury microlot production, with 80% of farms smaller than 3 hectares.
